Chicken A La King

Recipe provided by Gale S. "A family favorite when I was growing up."


  • 1/3 C. butter
  • Pepper (any color) cut into thin strips
  • 1 C. mushrooms (sliced)
  • 4 T flour
  • 1 C. chicken stock
  • 1 C. milk
  • 1/2 C. cream
  • ¼ - ½ C. pimento
  • 2 to 3 C. diced cooked chicken
  • Salt & pepper to taste
  • 2 egg yolks, slightly beaten
  • 3 T. sherry (optional)


  1. Melt butter; add the pepper and mushrooms; cook over low heat for about 5 minutes until soft. Add flour and stir until blended; slowly add stock and milk; stir over low heat until thick and smooth; add cream, pimento, and chicken; season to taste. Heat thoroughly.
  2. Stir a little of the warmed sauce into the beaten egg yolks; slowly add to the other ingredients; stir constantly. Add sherry. Serve immediately on buttered toast or patty shells or in timbale cases.
  3. Makes about 6 servings.
  4. Note: Good luck figuring out the patty shells and timbale cases. Modern day version could be served over rice or egg noodles.
