Chicken A La King
Recipe provided by Gale S. "A family favorite when I was growing up."
Ingredients
- 1/3 C. butter
- Pepper (any color) cut into thin strips
- 1 C. mushrooms (sliced)
- 4 T flour
- 1 C. chicken stock
- 1 C. milk
- 1/2 C. cream
- ¼ - ½ C. pimento
- 2 to 3 C. diced cooked chicken
- Salt & pepper to taste
- 2 egg yolks, slightly beaten
- 3 T. sherry (optional)
Directions
- Melt butter; add the pepper and mushrooms; cook over low heat for about 5 minutes until soft. Add flour and stir until blended; slowly add stock and milk; stir over low heat until thick and smooth; add cream, pimento, and chicken; season to taste. Heat thoroughly.
- Stir a little of the warmed sauce into the beaten egg yolks; slowly add to the other ingredients; stir constantly. Add sherry. Serve immediately on buttered toast or patty shells or in timbale cases.
- Makes about 6 servings.
- Note: Good luck figuring out the patty shells and timbale cases. Modern day version could be served over rice or egg noodles.
