Blueberry Coffee Cake
Recipe provided by Billie P.. "This is the best blueberry coffee cake I have ever tasted. Moist and super easy to make. Try some with a hot cup of coffee!"
Ingredients
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/2 tsp cinnamon
- 1/4 cup butter
- 2 cups flour
- 3/4 cup sugar
- 1/4 cup shortening or butter
- 3/4 cup milk
- 1 egg
- 2 1/2 tsp baking power
- 3/4 tsp salt
- 1 tsp cinnamon
- 2 cups fresh or frozen blueberries (thawed & drained)
Directions
- Heat oven to 375 and grease bottom and sides of 9x3" springform pan or 9" pan with shortening or cooking spray.
- In a small bowl mix brown sugar, 1/3 flour and 1/2 tsp cinnamon.
- Cut in the 1/4 butter with a fork until crumbly. Set aside.
- In a large bowl stir together all other ingredients except blueberries and beat with a spoon.
- Fold in the blueberries.
- Spread batter in the pan and sprinkle on the topping.
- Bake 45 to 50 minutes or until toothpick comes out clean. Cool 10 minutes and remove from pan.
- Make vanilla glaze....
- In a small bowl mix 1/2 cup powdered sugar, 1/4 tsp vanilla and 1 to t 1/2 tsp hot water until smooth. Drizzle over warm coffee cake.
