Italian Oil Cake
Recipe provided by Gale S.. "A famliy favorite that we just have to pass on!! Give it a try, you will be wanting more!"
Ingredients
- 2 C. flour
- 1 C. sugar
- ¼ C. oil
- 2 t. baking power
- ¼ t. salt
- 2 eggs
- 1 C. milk
- Vanilla or lemon juice
- ½ C. butter or margarine
- 1 C. brown sugar (packed)
- ¼ C. milk
- 1 ¾ to 2 C. confectioners’ sugar
Directions
- For the cake:
- Stir ingredients in bowl, by hand
- Bake @ 350° for approx. 30 minutes
- Easy Penuche Frosting:
- Melt butter in saucepan. Add brown sugar. Boil over low heat for 2 min., stirring constantly. Stir in milk. Bring to a boil, stirring constantly. Cool to lukewarm. Add confectioners’ sugar. Beat until thick enough to spread. If too thick add a little more water or milk.
